This is one of my favorite snacks to prepare for my little M, so I’ve been wanting to share it with you guys for months. Not only are they very nutritious (hello, quinoa and broccoli), but they taste amazing (hey, cheddar)! And when I say yummy, I don’t just mean my little child who adores veggies—even the pickiest toddler palates have fallen in love with these broccoli cheddar quinoa bars!

It was me, who treated her class to a treat of broccoli cheddar quinoa bars. And her instructor gave me a “Uh… ok” when I dropped them off and handed her the ingredient list. I hope the children consume them.” Hurt.

I felt like a complete failure as a mother, condemning my poor child to grow up to be the child of that incredibly uncool parent who never sends chocolate. Later that day, when I picked M up, the same instructor raved about how delicious the bars were, how much the kids enjoyed them, and how the mothers were requesting the recipe! Mom wins with health!

Ingredients Needed

  • Fresh broccoli is best, although frozen broccoli can still be used once it has thawed.
  • Cooked Quinoa: Amazingly nutritious! This is our favorite way to use up quinoa leftovers.
  • Cheese: Cheddar, Parmesan, and Eggs to glue everything together
  • For a hint of more flavor, add some salt and onion powder.

I love these Quinoa Bars with Broccoli Cheddar because they are essentially made by just adding all the ingredients to a bowl, stirring, and baking. It doesn’t get much simpler to make a nutritious homemade snack for kids!

  • 2 1/2 cups cooked quinoa
  • 3 cups broccoli chopped
  • 3 eggs (whisked)
  • 1 1/2 cup cheddar cheese (shredded)
  • 1/3 cup Parmesan cheese (shredded or Romano)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon onion powder
  1. Grease an 8 x 8 baking pan and preheat the oven to 350 degrees.
  2. To a big bowl, add the quinoa, broccoli, cheddar, romano, onion powder, and salt. Blend well.
  3. Toss everything in the basin with the whisked egg, making sure everything is completely covered.
  4. Smooth with a spatula after adding the mixture to the pan.
  5. Bake until the edges start to brown, about 40 to 45 minutes. Take out of the oven, let cool fully, then cut into squares and enjoy!
  6. For 4-5 days, store in the refrigerator in an airtight container.
