Lasagna Soup

Hands down, the best soup I’ve had all year!

Lasagna Soup Recipe:

Ingredients:

1 pound of lean ground beef

1 diced yellow onion

5 minced garlic cloves

2 tablespoons of olive oil,

4.5 cups of chicken broth

1 can (14.5 oz) of petite diced tomatoes

1 can (14.5 oz) of crushed tomatoes

2 1/2 tablespoons of tomato paste

2 teaspoons of dried basil

1 teaspoon of dried oregano

1/2 teaspoon each of dried thyme and crushed dried rosemary

Salt and pepper to taste

8 lasagna noodles, broken into bite-sized pieces

8 ounces of ricotta cheese

1 1/4 cups of shredded mozzarella cheese

1/2 cup of finely shredded parmesan cheese

2 tablespoons of freshly chopped parsley, plus extra for garnish

Instructions:

1. In a large pot, heat 1 tablespoon olive oil over medium-high heat. Brown the ground beef, then drain and set it aside.

2. In the same pot, add the remaining 1 tablespoon of olive oil. Sauté the diced onion until softened, about 3 minutes, then add minced garlic and sauté for 30 seconds.

3. Stir in chicken broth, crushed tomatoes, petite diced tomatoes, tomato paste, dried basil, dried oregano, crushed dried rosemary, dried thyme, browned ground beef, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

4. Meanwhile, cook lasagna noodles according to package instructions.

5. In a bowl, combine ricotta, mozzarella, and parmesan cheeses.

6. Add cooked noodles and chopped parsley to the soup. Adjust consistency with more broth if needed.

Serve in bowls, top with a dollop of cheese mixture, and garnish with parsley. The cheese will melt into the hot soup. Enjoy!
