Yummy Mickey Fluffy Pancake

Ingredients

2 egg yolks
3 egg whites
2 tablespoons milk
1 teaspoon vanilla extract
2 tablespoons sifted all-purpose flour
1 teaspoon baking powder
2 tablespoons sugar
A pinch of salt
A few drops of lemon juice

Directions

1️⃣ Prepare the Batter

In a bowl, whisk egg yolks, milk, and vanilla extract until smooth and creamy.

Sift in flour and baking powder. Mix gently until fully combined and smooth. Do not overmix to keep the texture light.

2️⃣ Make the Meringue

In a clean, dry bowl, beat egg whites with lemon juice on medium speed until foamy.

Gradually add sugar while beating. Continue until stiff, glossy peaks form. The meringue should hold its shape firmly.

3️⃣ Combine

Fold one-third of the meringue into the yolk mixture to lighten it.

Gently fold in the remaining meringue in two additions using a spatula. Use slow, careful motions to keep as much air as possible in the batter.

4️⃣ Cook the Pancakes

Lightly grease a non-stick pan and heat on very low heat.

Spoon batter into the pan to form one large circle for the face and two smaller circles for the ears to create the Mickey shape.

Cover with a lid and cook for 4–5 minutes on very low heat.

Carefully flip, cover again, and cook another 4–5 minutes until golden and fully set inside.

💡 For extra height, add a second spoonful of batter on top after 1–2 minutes of cooking.
