Decadent Chocolate-Covered Raspberry Cheesecake Domes with Velvet Ganache

Rich, creamy cheesecake infused with fresh raspberries, encased in a smooth chocolate shell and finished with glossy ganache — these elegant domes are pure luxury. Perfect for special occasions, dinner parties, or when you want a show-stopping dessert.

Ingredients:

For the Crust

1 1/2 cups chocolate cookie crumbs
4 tablespoons unsalted butter, melted

For the Cheesecake Filling

16 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
1/2 cup sour cream
3/4 cup fresh raspberries

For the Chocolate Coating

1 1/2 cups semi-sweet chocolate chips
1 tablespoon coconut oil

Instructions

1️⃣ Prepare the Crust

Preheat oven to 325°F (160°C).

Mix chocolate cookie crumbs with melted butter until evenly combined.

Press about 1 tablespoon of the mixture into the bottom of silicone dome molds or muffin cavities. Press firmly.

Bake for 8–10 minutes, then allow to cool completely.

2️⃣ Make the Cheesecake Filling

In a large bowl, beat softened cream cheese and sugar until smooth and creamy.

Add vanilla extract and mix.

Beat in eggs one at a time, mixing just until incorporated.

Add sour cream and blend until smooth.

Gently fold in fresh raspberries, being careful not to crush them too much.

3️⃣ Fill & Bake

Spoon the cheesecake mixture over the cooled crusts, filling each dome cavity nearly to the top.

Bake for 18–22 minutes, or until centers are set but slightly jiggly.

Turn off oven and let cheesecakes cool inside with the door slightly open for 20 minutes.

Refrigerate for at least 4 hours or overnight until fully chilled and firm.

4️⃣ Chocolate Coating

Carefully remove chilled domes from molds and place on a wire rack over parchment paper.

Melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth and glossy.

Let cool slightly for 2–3 minutes.

Pour melted chocolate over each dome, allowing excess to drip off for a smooth finish.

Refrigerate for 15–20 minutes until coating is set.

Optional Velvet Ganache Finish

For extra shine and richness, warm 1/4 cup heavy cream and pour over 1/2 cup chopped chocolate. Stir until silky smooth and spoon over the set chocolate shell.
