Pan-Seared Steak with Garlic Butter, Herb Potatoes & Green Beans

📝 Ingredients

For the Steak

2 ribeye or strip steaks (about 10 oz each)
Salt & freshly cracked black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
3 tablespoons butter
3 cloves garlic, smashed
2 sprigs fresh thyme or rosemary

For the Herb Potatoes

4 medium Yukon gold potatoes, cubed
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
Salt & pepper to taste

For the Green Beans

2 cups fresh green beans
1 tablespoon butter
Pinch of salt & pepper

🍽️ How to Make It

1️⃣ Roast the Herb Potatoes

Preheat oven to 425°F (220°C).

Toss cubed potatoes with olive oil, Italian seasoning, salt, and pepper. Spread evenly on a baking sheet.

Roast 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.

2️⃣ Season & Sear the Steak

Pat steaks completely dry with paper towels. Season generously with salt, pepper, and garlic powder.

Heat a cast-iron skillet over high heat until very hot. Add olive oil.

Sear steaks 3–4 minutes per side for medium-rare, adjusting time for desired doneness. A deep golden crust should form.

3️⃣ Baste with Garlic Butter

Reduce heat to medium. Add butter, smashed garlic, and thyme or rosemary.

Tilt the pan slightly and continuously spoon the melted garlic butter over the steaks for 1–2 minutes. This step adds incredible richness and flavor.

4️⃣ Sauté the Green Beans

In a separate pan, melt butter over medium heat.

Add green beans and sauté 4–5 minutes until tender-crisp. Season lightly with salt and pepper.

5️⃣ Rest & Serve

Transfer steaks to a plate and let rest 5–7 minutes before slicing against the grain.

Plate with crispy herb potatoes and green beans. Spoon extra garlic butter from the pan over the steak before serving.
