Caramel Brownie Cheesecake

📝 Ingredients

For the Brownie Base

  • 1 box brownie mix
  • ¼ cup vegetable oil
  • ¼ cup water
  • 1 large egg

For the Cheesecake Layer

  • 16 oz (450g) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

For the Topping

  • 1 cup caramel sauce
  • ½ cup chocolate chips

1️⃣ Prepare the Pan & Brownie Base

Preheat oven to 350°F (175°C). Grease a 9-inch springform pan with cooking spray.

In a bowl, mix brownie mix, oil, water, and egg until combined. Pour the batter into the bottom of the prepared pan and spread evenly.

2️⃣ Make the Cheesecake Batter

In a separate bowl, beat cream cheese, sugar, and vanilla until smooth and creamy.

Add eggs one at a time, mixing well after each addition. Stir in sour cream until fully incorporated and silky.

3️⃣ Assemble the Layers

Pour the cheesecake batter gently over the brownie layer.

Drizzle caramel sauce over the top and sprinkle with chocolate chips. For a marbled effect, lightly swirl the caramel using a knife.

4️⃣ Bake to Perfection

Bake for 60–70 minutes, or until the center is set but slightly jiggly.

Turn off the oven, crack the door open slightly, and let the cheesecake cool inside for 30 minutes to prevent cracking.
