Savory Balsamic Beef Short Ribs

Savory Balsamic Beef Short Ribs are deeply flavorful, fall-off-the-bone tender, and coated in a rich sweet-and-tangy balsamic glaze. Slow braising allows the meat to become incredibly soft while the sauce reduces into a glossy, restaurant-quality finish perfect for special dinners or comforting family meals.

📝 Ingredients

  • 2 pounds beef short ribs
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil (for searing)
  • 1 cup balsamic vinegar
  • 1/4 cup honey
  • 1/2 cup beef broth
  • 2 cloves garlic, finely minced
  • 1 teaspoon fresh rosemary, chopped (or 1/2 tsp dried)
  • Fresh parsley, chopped (for garnish, optional)

👩‍🍳 Instructions

1️⃣ Preheat & Prepare

Preheat oven to 350°F (175°C). Pat the short ribs dry with paper towels to help achieve a better sear. Season generously on all sides with salt and pepper.

2️⃣ Sear the Ribs

Heat olive oil in a heavy Dutch oven over medium-high heat. Place ribs in the pot without overcrowding. Sear for 3–4 minutes per side until a deep brown crust forms. Proper browning builds rich flavor. Remove ribs and set aside.

3️⃣ Build the Sauce Base

Reduce heat to medium. Add minced garlic to the same pot and sauté for about 30 seconds until fragrant. Carefully pour in balsamic vinegar to deglaze the pot, scraping up any browned bits from the bottom. Stir in honey and beef broth, then add chopped rosemary. Bring mixture to a gentle simmer.

4️⃣ Slow Braise

Return the short ribs to the pot, bone side up if applicable. The liquid should come about three-quarters of the way up the ribs. Cover tightly with a lid and transfer to the oven. Bake for 2 to 2½ hours, until the meat is very tender and easily pulls away from the bone.

5️⃣ Reduce the Glaze (Optional but Recommended)

Once ribs are tender, remove them carefully from the pot. Place the Dutch oven on the stovetop and simmer the sauce uncovered for 5–10 minutes until slightly thickened and glossy. This intensifies the flavor.

6️⃣ Rest & Serve

Return ribs to the sauce or spoon glaze generously over the top. Let rest 10–15 minutes before serving to allow juices to redistribute. Garnish with fresh parsley for color and freshness.
