4 boneless, skinless chicken breasts
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon paprika
Zest of 1 lime
Juice of 2 fresh limes
1 can (13.5 oz) full-fat coconut milk
1/2 cup chicken broth
1 teaspoon honey
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh cilantro, chopped
Lime wedges, for serving

👩‍🍳 Directions

1️⃣ Season the Chicken

Pat chicken breasts dry. Season both sides with salt, pepper, and paprika.

2️⃣ Sear

Heat olive oil in a large skillet over medium heat.

Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.

In the same skillet, add garlic and ginger. Sauté for about 30 seconds until fragrant.

4️⃣ Create the Coconut Lime Sauce

Stir in lime zest, lime juice, coconut milk, chicken broth, honey, and red pepper flakes.

Bring to a gentle simmer, stirring occasionally.

5️⃣ Simmer Until Tender

Return chicken to the skillet and spoon sauce over the top.

Cover and simmer for 12–15 minutes, or until chicken is fully cooked and tender (internal temperature 165°F / 75°C).

6️⃣ Finish & Serve

Taste and adjust seasoning if needed.

Garnish with fresh chopped cilantro and serve with lime wedges for extra brightness.
